Bara Claddu


 
Pronounced Barra Clathee, this cake is a type of light fruitcake, moist and fruity. Served for tea, it is usually slathered with fresh creamery butter.


1 cup flour
1/2 teasp baking powder
1 cup white sugar
1 cup dried mixed raisins and currants
1 teas of mixed spice
1 egg, beaten
1/8 cup milk

Preheat the oven to 160 Centigrade (moderate oven). Mix dry ingredients then add beaten egg. Add enough milk to make a dryish cake mix like consistancy.Put the mix into a greased loaf tin and bake for about 60 minutes. Check with toothpick. The result should be like a fruit cake - moist inside, but not wet. Cool and slice to serve, with unsalted butter.
