Cawl Lafwr - Laver Soup

 

Serves 4

This thick and hearty soup is thickened with Laver. Laver is an edible seaweed that is picked off rocks around the Welsh coast,  and is used to make this nourishing, thick vegetable soup.

4 ozs butter
2 medium onions, peeled & diced
2 pints lamb stock
3 ozs laverbread
3 potatoes, peeled & chopped
1 medium carrot, peeled & chopped
Salt & black pepper
½ level teaspoon sugar


Melt the butter in a saucepan and fry the vegetables until browned. Stir in the stock and laver. bring to the boil and simmer, covered for 20-30 minutes until the vegetables are tender. Allow to cool a little, then put through a sieve or blender. .Wipe the saucepan, add salt and black pepper and sugar and reheat thoroughly. Pour into bowls. Serve with fresh bread.
