Another ancient recipe for this delicious medieval spiced shortcake

Shortbread / Burrebrede ( Makes 12 portions )


100g caster sugar
2 teaspoons cinnamon
1/2 teaspoon ground cardamom seeds
1/2 teaspoon ground ginger
1/2 teaspoon allspice
1/4 teaspoon salt
300g plain flour
250g butter- softened

Method - Mix the sugar and all the spices together, reserve half the mix
Mix half the mix in to the sieved flour
Crumb the butter in to the flour, mix till you form a dough, if too dry add a touch of water
Press in to a well greased tin
Score the top
Sprinkle on the other half of sugar and spice mix
Bake in a preheated oven gas 4/180*c/350*f for approx 30-40 minutes till firm and golden
